I missed my vacation. Our annual trip to Florida was cancelled due to the pandemic. We take our yearly trip down to visit family and enjoy some sunshine after being cooped up all winter. It is a much needed trip – both mentally and physically as I don’t do well in winter. The upside is that the sun is starting to shine here in Pittsburgh a bit and the weather was warming up 5 minutes ago – then it started snowing of course! So, I figured if I can’t go to vacation – I can bring a little bit of vacation here with some of my favorite vacation cocktails that are simple, delicious and “health”-ier than their grocery store mix counterparts. Take a peek and tell me which you will be trying this weekend!
1\\ Pina Colada – This is my numero uno favorite cocktail for vacaton time. All you need is a blender, a can of pineapples, a can of coconut milk, ice, and some rum (white rum is my go-to for this cocktail). Here’s what to do:
Mix can of pineapples (drained), can of coconut milk, 2 cups of ice and 4 oz vodka. Pour into fun glass – can garnish with strawberries. Serves 4. Tip: you can easily omit the rum and make this into a delicious mocktail that the kids will love! (kid version below! )
2\\ White wine Sangria – here’s a philosophical question for you: is it really summertime if there’s no sangria?
Here’s what you need: 750mL bottle pinot grigio (or your favorite white wine), 2 cups club soda, 1 cup orange juice, 1 pint strawberries, 1 10 oz bag frozen peaches, 1 medium orange peeled, with 2 sprigs fresh lavender and/or mint to garnish!
Here’s what you do: Add the fruit to the bottom of a pitcher and pour the rest of the ingredients in and stir. If it is not sweet enough for your taste, you can add some honey to sweeten. Sangria is best when you let it marinate for at least 4 hours up to overnight. Enjoy with friends!
Here’s what you do: Fill glass with ice. Add 4 oz club soda, 1 oz vodka. Stir to mix. Squeeze lime juice in and garnish with strawberries and fresh mint.
